HEALTHY MONDAY: ROASTED VEGGIE TACOS RECIPE.


CLEAN EATING: VEGETARIAN TACOS.


WHAT YOU WILL NEED:


3 Red Bell Peppers
1 Large Onions or 2 small ones
Corn Tortillas
1/2  cup Olive Oil
Salt
Pepper

For your garnishes you will need:
Cilantro
Chopped Onions
3 Limes or more depending on your family size.
Guacamole Salsa (Recipe here )

STEP 1:  PREHEAT YOUR OVEN TO 375 DEGREES F.


STEP 2: LINE YOUR BAKING SHEET WITH FOIL. 
(This step is not really necessary but it sure will help with the clean up.)


STEP 3:
Start by taking out the seeds out of your peppers. I went a little crazy on the pictures showing you how to do this.  I figured it would be helpful for new cooks or the young learners ;)









STEP 5: 
Once your peppers are completely clean, proceed to slice them

Place them on the foil lined baking sheet

Move on to slicing the onions as thick or thin as you want them.


Place them on top of the sliced peppers and move on to the seasoning.

STEP 6: SEASONING
Drizzle the veggies with Olive Oil.  Eyeball about 1/2 of a cup or so and sprinkle salt and Pepper to taste. 
  





Mix the vegetables with your clean hands to get them seasoned evenly.

Place them in the preheated oven

Roast them for 25 minutes or so.  (Every oven is different so adjust your time more or less)

STEP 7:  WORK ON YOUR GARNISHES WHILE THE VEGGIES ROAST.

Chop the cilantro and dice the Onions.  Cut some limes into wedges and work on your salsa recipe.  


Don't skip on making the Guacamole Salsa.  It makes all the difference in the world.


Once your veggies are done, you are ready to assemble and serve.

STEP 8: COOK YOUR TORTILLAS AND PUT YOUR TACOS TOGETHER.

Depending on how much time I have, I either throw the tortillas in the microwave or cook them on a traditional Mexican comal or griddle.
